Ingredients:
- 450g zucchini (about 3 medium)
- 1 brown onion
- ½ teaspoon sea salt
- 1 cup plain flour
- 2 teaspoons baking powder
- 1 cup freshly grated Parmesan
- 1 large egg
- 125ml unsweetened almond milk
- ½ teaspoon black pepper
- 1 teaspoon ground cumin
- 1/2 cup extra virgin olive oil
- 1/2 cup tzatziki sauce, to serve
Method
- Line a few paper towels out on a flat surface. Grate zucchini and brown onion and spread evenly over the paper towel. Place another paper towel over the top and press gently to squeeze out excess moisture. Allow to sit for 10 minutes.
- In a large bowl, whisk together the flour, baking powder, cumin, cajun and salt & pepper. Stir in the parmesan, egg, milk and olive oil. Add the zucchini and onion mixture, mixing well until combined.
- In a large, deep skillet, pour enough oil to create a 1.5cm layer and heat over medium-high until the oil starts crackling.
- Working in batches, carefully drop ¼ cup portions of batter into the hot oil. Use a fork to spread each portion into thin rounds, about 2cm thick. Fry for 3–4 minutes per side or until golden brown and cooked through. Repeat with the remaining batter.
- Transfer the fritters to a paper towel lined plate and season with a pinch of flaky salt, pepper and chilli flakes. Serve with fresh coriander and warm tzatziki sauce on the side for dipping

Ingredients
- 1 cup Greek yogurt (full-fat for the best texture)
- 1/2 cucumber, grated
- 1–2 cloves garlic, minced
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice (or white vinegar)

Instructions
- Grate and drain the cucumber – Grate the cucumber using a box grater, then squeeze out excess moisture using a clean kitchen towel or paper towels. This prevents the tzatziki from becoming watery.

- Chill – Let the tzatziki sit in the fridge for at least 30 minutes to allow the flavors to meld.
- Serve

- Adjust garlic and lemon juice to your taste preference.
- Use full-fat Greek yogurt for a thick and creamy texture.
